Nutritional Recipes: An Antioxidant Salsa


This mouthwatering recipe is courtesy of a local farm in the Bronx. It's one of our favorites because you can get all the nutrient-rich ingredients locally!

Garden of Happiness Viva Salsa


Ingredients

½ cup of cilantro chopped

1 tablespoon coriander, ground

½ red onion, finely chopped, or a small bunch of scallions (bulbs and greens), chopped

½ cup red bell pepper, finely chopped

½ cup green bell pepper, finely chopped

1 jalapeno pepper (with seeds for more spice), minced

3 - 4 firm ripe tomatoes

1 tomatillo, chopped

Sea salt, to taste

1 lemon


Directions

In a mixing bowl, combine all of the herbs and veggies. Add salt and a squeeze of lemon juice to taste. Stir, cover, and refrigerate for about thirty minutes. Serve with your favorite tortilla chips. Add chopped mango or peach for additional flavor.


This refreshing, mouthwatering recipe is rich in lycopene, a powerful antioxidant. Antioxidant protects cells from the damage caused by unstable molecules known as free radicals. Prepare it with local produce from your Farmer’s Market. It is rich in fiber and gluten free.
