Nutritional Recipes: An Antioxidant Salsa
Garden of Happiness Viva Salsa
½ cup of cilantro chopped
1 tablespoon coriander, ground
½ red onion, finely chopped, or a small bunch of scallions (bulbs and greens), chopped
½ cup red bell pepper, finely chopped
½ cup green bell pepper, finely chopped
1 jalapeno pepper (with seeds for more spice), minced
3 - 4 firm ripe tomatoes
1 tomatillo, chopped
Sea salt, to taste
In a mixing bowl, combine all of the herbs and veggies. Add salt and a squeeze of lemon juice to taste. Stir, cover, and refrigerate for about thirty minutes. Serve with your favorite tortilla chips. Add chopped mango or peach for additional flavor.
